Our staple loaf. We use sustainably grown stoneground, heritage wheat flour, wholegrain emmer flour, a hint of spelt flour and some high protein bakers flour to achieve a loaf that is both soft and chewy, yet nutritious and delicious. We use high hydration and long fermentation to create a complex, full flavour with a moderately open crumb. A 950g freeform loaf.

The only other ingredients going into this loaf are filtered rainwater, pink Himalayan salt and our starter, “Dianne”. We use high hydration and long fermentation to create a complex, full flavoured loaf with a moderately open crumb. A 950g freeform loaf.
